Oreo Cheesecake Squares
I made up a recipe for oreo cheesecake squares! Here it is!
Crust
No less than28 oreos and I suspect no more than 35
1/4 cup oil
1 egg
I crushed everything together with a potato masher in a 9x13 pan. It's
a little hard to spread out. So, once you've crushed and mixed
everything put some in all four corners of the pan and squash it down
until they all meet in the middle.
Bake the crust at 350 for about 20 minutes. Yes, it'll be a little soft
at this point. If you are going to use the crust for something that
won't be baked like a pudding pie I suggest baking it longer until
it's crunchy.
Filling
16ounces cream cheese
1-1/2 cups chocolate chips
2 eggs
1/4 cup sugar
Melt the chocolate chips in a bowl with room enough for cream cheese
later. I melt them in the microwave. You have to stir them every 30
seconds or they *will* burn!
When the chocolate is almost melted put in the bricks of cream cheese.
Keep cooking for 30 seconds and stirring until it mixes together.
Mix in egg and sugar and vanilla.
You could put in about 1/2 tsp salt if you want.
It's easier to mix this with electric beaters to get out the lumps.
If yo want you can now put in the rest of the bag of chocolate chips
(1/2 cup).
Spread over crust and bake at 350 for about 20 minutes.
You know it's done when the cake isn't jiggly on top. I touch it
lightly with my fingertips and try to jiggle it, like jello.
