the Mongoose recipe book Page four

Wheat Bread

6-1/2 cup water
3/4 cup honey
3 tbsp yeast
3/4 cup oil
12 cups wheat flour
Mix water, honey, oil and yeast.
The water should be warm, so that if you put some on the inside of your
wrist it doesn't sting in the slightest, around 110 degrees F.
Let stand 5 minutes or so. Until the water is a bit bubbly and smells
 like yeast.
Mix in the flour. You may need more flour than I said. Enough so the
 dough isn't sticky.
Kneed the bread for 20 minutes. Let rise until double, about an hour.
Punch dough down. Let rise until doubled. punch dough down. Separate
into four equal portions. Put in four 9x5 bread pans. Let rise until
 doubled.
Note: Let bread rise in a warm place covered with a damp cloth.
Bake at 375 for 30-35 minutes.
They're done when they sound hollow when you tap the bottom of the loaf.
