Vegetable Tamarind Rice Bowl
Ingredients: 
-1 tablespoon olive oil 
-1/4 cup diced onion 
-1/4 cup diced tomato 
-2 cloves garlic, minced 
-2 tablespoons tamarind paste
-2 tablespoons maple syrup 
-1 teaspoon garam masala 
-1/4 teaspoon salt 
-1/4 teaspoon pepper 
-2 cups vegetable broth 
-1 cup cooked white or brown Rice
-1/4 cup roasted peanuts, roughly chopped 
-scallions and cilantro for garnish (optional)
Instructions:
1. Heat the olive oil in a large dutch oven.
2. Add in the diced onion and tomato and saute until softened.
3. Add the garlic and cook until fragrant.
4. Stir in the tamarind paste, maple syrup, garam masala, salt and
 pepper
 until combined.
5. Add the vegetable broth and bring to a boil.
6. Add the cooked rice and cook for 8-10 minutes, or until desired
 tenderness is reached.
7. Remove from heat and stir in the roasted peanuts.
8. Serve in a bowl and top with optional scallions and cilantro. Enjoy!
